- 1 lb chicken breasts (boneless, skinless, cut into bite-sized pieces)
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/4 cup unsalted butter (melted)
- 2 tbsp olive oil (for searing chicken)

- 2 cups cooked rice (white or brown)
- 1 cup shredded lettuce
- 1 cup cherry tomatoes (halved)
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch or blue cheese dressing
- 1/4 cup green onions (thinly sliced)

Instructions
- In a bowl, combine 1/2 cup of hot sauce with 1/4 cup of melted unsalted butter. Stir until the mixture is smooth and well-blended.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the bite-sized chicken pieces, cooking for 5-7 minutes until they are golden brown and cooked through.
- Pour the prepared Buffalo sauce over the seared chicken. Stir gently and let it simmer for 2-3 minutes.
- On a plate, layer 2 cups of warm cooked rice, topped with the Buffalo chicken, 1 cup of shredded lettuce, and 1 cup of halved cherry tomatoes.
- Sprinkle 1/2 cup of shredded cheddar cheese over the top, followed by a drizzle of 1/4 cup of ranch or blue cheese dressing, and finish with 1/4 cup of sliced green onions.
- If desired, add sliced avocado to your bowls for an extra creamy texture.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove.
