Description

Delightful Buffalo Chicken Bowls combine bold flavors with fresh veggies and creamy toppings, making them a satisfying comfort food.


Ingredients

  • 1 lb chicken breasts (boneless, skinless, cut into bite-sized pieces)
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter (melted)
  • 2 tbsp olive oil (for searing chicken)

  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup green onions (thinly sliced)
  • optional sliced avocado

Instructions

  1. In a bowl, combine 1/2 cup of hot sauce with 1/4 cup of melted unsalted butter. Stir until the mixture is smooth and well-blended.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the bite-sized chicken pieces, cooking for 5-7 minutes until they are golden brown and cooked through.
  3. Pour the prepared Buffalo sauce over the seared chicken. Stir gently and let it simmer for 2-3 minutes.
  4. On a plate, layer 2 cups of warm cooked rice, topped with the Buffalo chicken, 1 cup of shredded lettuce, and 1 cup of halved cherry tomatoes.
  5. Sprinkle 1/2 cup of shredded cheddar cheese over the top, followed by a drizzle of 1/4 cup of ranch or blue cheese dressing, and finish with 1/4 cup of sliced green onions.
  6. If desired, add sliced avocado to your bowls for an extra creamy texture.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove.
