- 2 tablespoons Butter (divided)
- 2 tablespoons Extra Virgin Olive Oil (divided)
- 1.5 lbs Stew Meat (chuck roast or similar cuts)
- 3 tablespoons Flour (thickening agent)
- 1 lb Button Mushrooms (sliced)
- 1 cup Onions (sliced)
- 1.5 tablespoons Garlic (minced)
- 6 cups Beef Broth
- 6 sprigs Thyme (or 1 teaspoon dried thyme)
- 3 tablespoons Worcestershire Sauce
- 0.5 teaspoon Black Pepper (to taste)
- 1.5 tablespoons Dijon Mustard
- 4 oz Cream Cheese (sliced or cubed)
- 12 oz Egg Noodles (uncooked)
- 1 tablespoon Tomato Paste
- 0.75 cup Sour Cream
Instructions
- Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a Dutch oven over medium-high heat.
- Add the stew meat to the pot. Brown the meat on all sides for about 5-7 minutes. Remove and set aside.
- In the same pot, add the remaining tablespoon of butter and olive oil. Add the onions and garlic, cooking until soft.
- Stir in the mushrooms and cook until they release their juices.
- Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for 1-2 minutes.
- Pour in the beef broth slowly, stirring to prevent lumps. Add thyme, Worcestershire sauce, black pepper, and Dijon mustard.
- Return the browned meat to the pot and bring everything to a simmer.
- Cover the pot and let it cook on low heat for about 60 minutes or until the meat is tender.
- Add cream cheese and tomato paste, stirring until melted and well combined.
- Cook the egg noodles according to package instructions. Drain and set aside.
- Once the meat is tender and the sauce has thickened, stir in the sour cream.
- Serve the beef stroganoff over the cooked egg noodles.
Notes
For a deeper flavor, consider marinating the beef in some broth and Worcestershire sauce before cooking. Don’t rush the cooking process; letting it simmer will make the meat tender and the sauce flavorful.
