Ingredients

- 2 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by cutting off the tops and removing the seeds.
- Sauté the ground beef, diced onion, and minced garlic in a skillet until browned.
- Combine the cooked rice and diced tomatoes with the beef mixture, seasoning with salt and pepper.
- Stuff each bell pepper with the filling and place them upright in a baking dish.
- Add shredded cheese on top of each pepper.
- Bake covered with foil for 30 minutes.
- Finish baking uncovered for an additional 10-15 minutes until cheese is bubbly.
- Disher out the warm stuffed peppers and enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F.
