Description

A comforting dish of vibrant baked stuffed peppers filled with ground beef, rice, and cheese, perfect for family dinners.


Ingredients

  • 2 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds.
  3. Sauté the ground beef, diced onion, and minced garlic in a skillet until browned.
  4. Combine the cooked rice and diced tomatoes with the beef mixture, seasoning with salt and pepper.
  5. Stuff each bell pepper with the filling and place them upright in a baking dish.
  6. Add shredded cheese on top of each pepper.
  7. Bake covered with foil for 30 minutes.
  8. Finish baking uncovered for an additional 10-15 minutes until cheese is bubbly.
  9. Disher out the warm stuffed peppers and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F.
