Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Combine graham cracker crumbs and melted butter in a mixing bowl. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 10 minutes.
  2. Beat the softened cream cheese, powdered sugar, and vanilla extract in another bowl until smooth.
  3. Whip the heavy cream in a separate bowl until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture until well combined.
  5. Pour the cheesecake filling onto the chilled crust and spread it evenly.
  6. Top with fresh berries.
  7. Chill in the refrigerator for at least 240 minutes or until set.
