- 3 pounds Chuck Roast
- 2 tablespoons Olive Oil
- 1 large Onion
- 4 cloves Garlic
- 3 cups Beef Broth

- 1 teaspoon Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
Instructions
- Cut the chuck roast into large chunks.
- Heat the olive oil in a heavy pot over medium-high heat.
- Brown the chunks of chuck roast on all sides.
- Remove the meat and set it aside, then add the chopped onion and garlic to the pot.
- Sauté until the onion is soft.
- Add the beef back into the pot, then pour in the beef broth.
- Season with chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
- Bring to a simmer, then cover and cook on low heat for about 180-240 minutes, or until the meat is tender.
- Shred the meat using two forks once cooked.
