Ingredients

  • 3 pounds Chuck Roast
  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 4 cloves Garlic
  • 3 cups Beef Broth
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Cut the chuck roast into large chunks.
  2. Heat the olive oil in a heavy pot over medium-high heat.
  3. Brown the chunks of chuck roast on all sides.
  4. Remove the meat and set it aside, then add the chopped onion and garlic to the pot.
  5. Sauté until the onion is soft.
  6. Add the beef back into the pot, then pour in the beef broth.
  7. Season with chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
  8. Bring to a simmer, then cover and cook on low heat for about 180-240 minutes, or until the meat is tender.
  9. Shred the meat using two forks once cooked.
