- 1 lb chicken breasts
- 1 cup brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Toppings: avocado, cilantro, cheese, sour cream (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the brown rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cook on low for 360-480 minutes or on high for 180-240 minutes.
- Once the chicken is cooked, shred it with two forks and mix everything well.
- Serve with your choice of toppings.
Notes
For extra flavor, marinate the chicken in spices before cooking. This recipe can be made vegetarian by using extra beans or tofu.
