  • 1 tablespoon fresh ginger, grated
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 2 green onions, chopped
  • Cilantro or parsley, for garnish

Instructions

  1. Marinate the chicken: In a large bowl, combine the chicken, Jamaican curry powder, salt, and black pepper. Toss to coat the chicken evenly. Allow it to marinate for at least 15 minutes.
