Crispy fries loaded with cheese, bacon, and your favorite toppings, perfect for game day or movie nights.

- 2 lbs Russet potatoes, scrubbed and cut into fries
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Paprika
- 0.5 tsp Onion powder
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 1.5 cups Shredded cheddar or Mexican cheese blend
- 6–8 Bacon strips, cooked and crumbled
- 0.5 cup Sour cream
- 3 Green onions, thinly sliced
- 1 Jalapeño, thinly sliced (optional)
- 0.5 cup Guacamole or diced avocado
- 0.25 cup Pickled jalapeños
- 0.25 cup Black olives, sliced
- 0.25 cup Tomatoes, diced
- 2 tbsp Cilantro, chopped (optional)
- Hot sauce to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet.
- Wash, scrub, and slice potatoes into ½-inch fries. Soak in cold water for 30 minutes, then dry potatoes thoroughly with towels.
- Toss potatoes with olive oil and seasonings in a large bowl.
- Spread fries on the baking sheet without overlapping. Bake for 15 minutes, flip them, and bake for another 10–15 minutes.
- Cook bacon in a skillet until crispy, then crumble it.
- Remove fries from the oven. Top with cheese and return to the oven for 3–5 minutes or until melted.
- Top with bacon, sour cream, green onions, and jalapeños. Add any other desired toppings.
- Serve immediately while hot and gooey.
Notes
Soak the fries to remove excess starch for extra crispiness. Don’t overcrowd the baking sheet for even cooking.
