- 2 tablespoons Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 pound Ground Turkey
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 tablespoon Italian Seasoning
- 1 14.5-ounce can Diced Tomatoes
- 2 cups Chicken Broth
- 8 ounces Pasta (Penne or Rotini)
- 4 cups Fresh Spinach
- ½ cup Parmesan Cheese
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey, breaking it apart as it cooks. Season with salt, black pepper, and Italian seasoning. Cook until the turkey is no longer pink.
- Pour in the diced tomatoes and chicken broth. Stir well.
- Bring the mixture to a boil, then add the pasta. Reduce heat and let it simmer until the pasta is cooked and has absorbed some of the liquid, about 10-12 minutes.
- Stir in the fresh spinach until it wilts down, then remove from heat.
- Sprinkle the Parmesan cheese on top, stirring to combine.
Notes
For added flavor, consider sautéing mushrooms or bell peppers. Use gluten-free pasta and broth for a gluten-free version.
