Description

A comforting casserole with layers of ground beef, mixed vegetables, and creamy mashed potatoes, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter (for dotting on top)
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic. Cook until the onion is soft.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Cook until everything is heated through, about 5-7 minutes.
  5. Transfer the beef mixture into a baking dish.
  6. Spread the mashed potatoes over the top of the beef mixture. Dot with butter and sprinkle shredded cheese on top if desired.
  7. Bake for 20-25 minutes, or until the top is golden and bubbly.

Notes

For a crispy top, broil the casserole for a couple of minutes after baking. Store leftovers in an airtight container for up to 3 days.
