A comforting casserole with layers of ground beef, mixed vegetables, and creamy mashed potatoes, perfect for family dinners.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- 3 cups mashed potatoes (prepared from about 3 large potatoes)
- 2 tablespoons butter (for dotting on top)
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Cook until everything is heated through, about 5-7 minutes.
- Transfer the beef mixture into a baking dish.
- Spread the mashed potatoes over the top of the beef mixture. Dot with butter and sprinkle shredded cheese on top if desired.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
Notes
For a crispy top, broil the casserole for a couple of minutes after baking. Store leftovers in an airtight container for up to 3 days.
