Ingredients

- 2 cups sushi rice
- 1 pound salmon fillet
- 3 tablespoons mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- Nori sheets, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the sushi rice according to package instructions.
- Prepare the salmon by mixing the mayonnaise, sriracha, and soy sauce together.
- Place the salmon in a baking dish and spread the sriracha mixture on top.
- Bake for 20 minutes or until the salmon is cooked through.
- Spread the cooked sushi rice in an even layer on a baking dish.
- Flake the cooked salmon over the rice and top with sliced avocado and green onions.
- Serve with nori sheets to wrap.
Notes
Store leftovers in an airtight container in the fridge and consume within 2-3 days. Reheat in the oven or microwave before serving.
