- 4 large fresh peaches, ripe but firm
- 2 tablespoons brown sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter, melted
- 1 cup mascarpone cheese
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 1/2 teaspoon ground cinnamon (optional)
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and dry the peaches, then slice each peach in half and carefully remove the pit.
- Arrange the peaches cut-side up in an oven-safe baking dish, leaving space between them.
- Mix melted butter, brown sugar, and lemon juice in a small bowl until the sugar dissolves.
- Brush or spoon the butter mixture generously over the peach halves.
- If desired, sprinkle ground cinnamon over the peaches.
- Bake the peaches for 20-25 minutes until tender and caramelized.
- Whisk together mascarpone, powdered sugar, and vanilla extract until smooth and fluffy (about 2-3 minutes).
- Remove the peaches from the oven and let them cool slightly.
- Serve the warm peaches topped with a dollop of vanilla mascarpone and garnish with fresh mint leaves.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed fresh.
