Description

A delightful dish combining juicy chicken with the sweetness of pineapple and coconut, perfect for an easy dinner or entertaining.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1/2 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Mix together the coconut milk, soy sauce, brown sugar, lime juice, and garlic in a bowl.
  2. Place the chicken breasts in a zip-top bag and pour the marinade over them. Seal and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or a skillet over medium heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill or cook the chicken for about 6-7 minutes per side, or until fully cooked.
  5. During the last few minutes of cooking, add pineapple chunks to the grill or skillet to warm them up.
  6. Serve the chicken topped with the grilled pineapple and garnish with fresh cilantro.

Notes

Marinating the chicken longer will enhance flavor. Adjust sweetness with more or less brown sugar.
