A simple yet delicious rice dish featuring mixed vegetables and butter, perfect as a side or main dish.
Ingredients

- 1 cup of rice
- 2 cups of water
- 1 teaspoon of salt
- 1 tablespoon of butter
- 1 cup of mixed vegetables (like peas, carrots, and corn)
- 1/2 teaspoon of garlic powder
- Black pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- Bring 2 cups of water to a boil in a medium-sized pot.
- Add the rice and salt to the pot, then stir in the butter.
- Lower the heat and cover the pot. Let it simmer for about 15 minutes, or until the water is absorbed.
- Add the mixed vegetables and garlic powder to the pot in the last 5 minutes of cooking. Cover and let them steam with the rice.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork and season with black pepper to taste. Serve warm.
Notes
Great as a side or main dish. You can serve it alongside grilled chicken, fish, or a fresh salad.
