- 6 large eggs
- 1/2 cup cottage cheese
- 1/4 cup heavy cream
- 1/2 cup shredded cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cooked bacon (chopped)
- 1/2 cup diced bell pepper (cooked)
- 1/2 cup chopped spinach (sautéed)
- 1/4 cup green onions (sliced)
- 1/2 cup mushrooms (cooked)
- Garlic powder (optional, to taste)
- Onion powder (optional, to taste)
- Hot sauce (optional, to taste)
Instructions
- Preheat oven to 300°F. Grease muffin tin well. Prepare a water bath if desired.
- Cook bacon and vegetables (if using) and allow to cool slightly.
- Blend eggs, cottage cheese, cream, salt, and pepper until smooth.
- Pour the blended egg base into a bowl. Stir in cheese and any cooked mix-ins.
- Spoon mixture into the muffin tin, filling each about 3/4 full. Sprinkle extra cheese on top if desired.
- Bake for 20–25 minutes or until set in the center. Use a water bath for a creamier texture.
- Cool in the pan for 5 minutes before removing. Serve warm or store for later.
Notes
Experiment with different mix-ins and adjust seasonings to personal taste.
