Description

Nutritious and customizable egg bites, perfect for breakfast or a snack.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cooked bacon (chopped)
  • 1/2 cup diced bell pepper (cooked)
  • 1/2 cup chopped spinach (sautéed)
  • 1/4 cup green onions (sliced)
  • 1/2 cup mushrooms (cooked)
  • Garlic powder (optional, to taste)
  • Onion powder (optional, to taste)
  • Hot sauce (optional, to taste)

Instructions

  1. Preheat oven to 300°F. Grease muffin tin well. Prepare a water bath if desired.
  2. Cook bacon and vegetables (if using) and allow to cool slightly.
  3. Blend eggs, cottage cheese, cream, salt, and pepper until smooth.
  4. Pour the blended egg base into a bowl. Stir in cheese and any cooked mix-ins.
  5. Spoon mixture into the muffin tin, filling each about 3/4 full. Sprinkle extra cheese on top if desired.
  6. Bake for 20–25 minutes or until set in the center. Use a water bath for a creamier texture.
  7. Cool in the pan for 5 minutes before removing. Serve warm or store for later.
