Description

A delicious and easy egg casserole, perfect for breakfast, brunch, or dinner.


Ingredients

Scale
  • 12 large eggs
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup whole milk
  • 6 cups cubed bread (slightly stale or Hawaiian rolls)
  • 1 lb breakfast sausage (cooked and crumbled)
  • ½ cup diced onion
  • ½ cup diced bell pepper (any color)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Butter or grease (for greasing pan)
  • Optional add-ins (bacon, ham, mushrooms, spinach, or hash browns)

Instructions

  1. In a skillet, cook breakfast sausage until browned and crumbled. Drain grease, reserving a small amount if desired for brushing later.
  2. Grease a 9×13 baking dish. Add cubed bread evenly across the bottom.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder. Stir in cooked sausage, onion, bell pepper, and half the cheese.
  4. Pour the egg mixture evenly over the bread cubes. Press bread down gently with a spatula so it soaks up the liquid. Sprinkle remaining cheese on top.
  5. Cover with foil and refrigerate overnight (optional) or bake immediately at 350°F.
  6. Bake covered for 45 minutes. Remove foil and bake an additional 15 minutes, until golden and the center is set.
  7. Let cool for 10 minutes before slicing. Optionally brush the top with reserved sausage grease for crispiness. Serve warm.

Notes

Use slightly stale bread for better texture and feel free to add your favorite ingredients for more flavor.
