Description

Ingredients

  • 1 1/2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1 cup fresh blackberries
  • Buttercream frosting (for layering and decorating)
  • Fresh blackberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Mix buttermilk, vegetable oil, eggs, and vanilla until well combined in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Carefully stir in the boiling water until the batter is well combined and smooth.
  6. Gently fold in the fresh blackberries.
  7. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. Layer the cakes with buttercream frosting and decorate the top with additional blackberries.
