- 4 pieces of white fish fillets (such as cod or haddock)
- 2 large potatoes (for homemade fries)
- 1 cup of all-purpose flour
- 1 cup of cold sparkling water
- 1 tsp baking powder
- Salt and pepper to taste
- Oil for frying (like vegetable or canola)
Instructions
- Start by washing and peeling the potatoes for the fries. Cut them into even-sized batons for optimal frying!
- In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add in the cold sparkling water, mixing until the batter is smooth and just thick enough to coat the back of a spoon.
- In a deep frying pan or a deep fryer, heat oil over medium-high heat until it’s shimmering. Aim for about 350°F (175°C) for frying – this is the sweet spot for crispy results!
- Carefully drop your batons of potatoes into the hot oil. Fry until they turn golden, approximately 4-5 minutes, then remove and let them drain on paper towels.
- Now, dip each fish fillet into the batter and gently lower them into the hot oil. Fry until they turn a beautiful golden brown, about 4-6 minutes. Keep an eye on them to ensure they cook evenly!
- Once everything is cooked, serve your fish and chips hot, alongside a squirt of lemon and some tartar sauce if desired.
Notes
Serve with mushy peas or coleslaw for added crunch. Store leftovers in an airtight container for up to two days and reheat in the oven.
