- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cups diced potatoes
- 1 cup frozen corn
- 1 tablespoon olive oil
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- Salt and pepper to taste

- Drizzle olive oil over the griddle to prevent sticking.
- Add the diced onions and bell peppers to the griddle. Sauté until they start to soften, about 3-4 minutes.

- Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and everything is heated through.
- If desired, top with shredded cheese for the last few minutes of cooking until melted.
- Serve hot and enjoy your delicious Cowboy Dinner!
Notes
For added flavor, consider serving it with salsa or your favorite hot sauce on the side.
