Description

A quick and easy dinner featuring tender meat, fresh vegetables, and bold seasonings, perfect for busy weeknights or casual gatherings.


Ingredients

  • 1 lb ground beef
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups diced potatoes
  • 1 cup frozen corn
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • Optional: shredded cheese for topping

Instructions

  1. Preheat your Blackstone griddle to medium heat.
  2. Drizzle olive oil over the griddle to prevent sticking.
  3. Add the diced onions and bell peppers to the griddle. Sauté until they start to soften, about 3-4 minutes.
  4. Push the vegetables to one side and add the ground beef. Cook until browned, breaking it apart as it cooks.
  5. Once the beef is cooked, mix in the potatoes and frozen corn.
  6. Sprinkle the garlic powder, chili powder, salt, and pepper over everything. Stir well to combine.
  7. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and everything is heated through.
  8. If desired, top with shredded cheese for the last few minutes of cooking until melted.
  9. Serve hot and enjoy your delicious Cowboy Dinner!
