Description

A quick, healthy, and delicious meal featuring ground turkey, fresh vegetables, and tasty toppings.


Ingredients

  • 1 lb ground turkey (lean)
  • 1 tablespoon olive oil (extra virgin)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes (halved)
  • 1 unit cucumber (diced)
  • 1/2 unit red onion (thinly sliced)
  • 1 cup romaine lettuce (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup Kalamata olives (pitted and sliced)
  • 1/2 cup tzatziki sauce
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Drain any excess fat from the skillet if necessary.
  4. Stir in garlic powder, onion powder, dried oregano, salt, black pepper, and paprika; cook for an additional 2-3 minutes until fragrant.
  5. While the turkey is cooking, prepare the quinoa or rice according to package instructions if not pre-cooked.
  6. In a serving bowl, start with a base of cooked quinoa or rice.
  7. Top the quinoa or rice with the cooked ground turkey mixture.
  8. Arrange cherry tomatoes, cucumber, red onion, and romaine lettuce on top of the turkey.
  9. Sprinkle crumbled feta cheese and sliced Kalamata olives over the vegetables.
  10. Drizzle tzatziki sauce generously on top and garnish with chopped fresh parsley.
  11. Serve immediately and enjoy.

Notes

Use a non-stick skillet to prevent sticking, and feel free to customize the vegetables based on your preferences.
