Description

A light and airy low-carb bread made with cottage cheese, perfect for snacks or as a sandwich base.


Ingredients

  • 3 large Eggs
  • 1 cup Cottage Cheese
  • 1 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt
  • 1 tablespoon Cornstarch or Arrowroot Powder
  • 1 tablespoon Honey or Sweetener (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking tray with parchment paper.
  2. Separate the egg whites from the yolks and beat the egg whites with cream of tartar until stiff peaks form.
  3. Blend the cottage cheese until smooth, then mix in the egg yolks, salt, cornstarch, and honey or sweetener.
  4. Gently fold the egg whites into the cottage cheese mixture.
  5. Scoop the mixture onto the prepared baking tray in small rounds, about 3 inches in diameter.
  6. Bake for 25 to 30 minutes until golden and set.
  7. Cool on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for a week. To reheat, use a toaster or oven.
