Description

This light and airy bread is a perfect low-carb alternative for sandwiches or as a side. It’s easy to make with simple ingredients.


Ingredients

  • 1 cup full-fat cottage cheese
  • 4 large eggs
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, egg yolks, baking powder, and salt in a mixing bowl. Mix until smooth.
  3. Whisk the egg whites in another bowl until they form stiff peaks.
  4. Fold the egg whites gently into the cottage cheese mixture.
  5. Spoon the mixture onto the prepared baking sheet, forming small rounds.
  6. Bake for about 25 to 30 minutes, or until the tops are golden brown.
  7. Allow to cool slightly before serving.
