Description

Delicious and protein-packed pancakes that are fluffy and perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 4 eggs
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the cottage cheese and eggs until well combined.
  2. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the dry ingredients to the wet mixture and mix until just combined.
  4. Stir in the melted butter and vanilla extract.
  5. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.

Notes

Don’t overmix the batter for fluffier pancakes. Adjust thickness with milk if necessary.
