- 1 cup cottage cheese
- 4 eggs
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix the cottage cheese and eggs until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Stir in the melted butter and vanilla extract.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
Don’t overmix the batter for fluffier pancakes. Adjust thickness with milk if necessary.
