Description

A vibrant and flavorful salad featuring orzo pasta, colorful vegetables, and tangy feta cheese, perfect for any occasion.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
