Ingredients

- 1 cup fresh rhubarb, chopped
- 1 cup water
- 1/2 cup sugar
- Sparkling water
- Ice
- Mint leaves (for garnish)
Instructions
- Combine chopped rhubarb, water, and sugar in a saucepan.
- Bring to a boil and then simmer for 10-15 minutes until the rhubarb is soft.
- Strain the mixture to remove solids and cool the syrup.
- Add ice to a glass and pour in the rhubarb syrup.
- Top off with sparkling water and stir gently.
- Garnish with fresh mint leaves before serving.
