Description

A refreshing and crunchy side dish combining sweet corn and Fritos chips, perfect for barbecues and potlucks.


Ingredients

  • 1 bag Fritos chips
  • 2 cups sweet corn (canned or frozen)
  • 1 cup diced bell peppers (red and green)
  • 1/2 cup diced red onion
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the sweet corn, diced bell peppers, diced red onion, and mayonnaise in a large bowl.
  2. Stir in the lime juice and season with salt and pepper.
  3. Fold in the Fritos chips until coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Add freshly cooked corn for a sweeter taste and feel free to customize with other veggies.
