Description

A bright and crunchy salad with sweet corn, fresh vegetables, and Fritos, perfect for casual gatherings.


Ingredients

Scale
  • 30 ounces frozen yellow corn
  • 1½ cups shredded sharp cheddar cheese
  • ¾ cup diced green bell pepper
  • ¾ cup diced red onion
  • 1 cup mayonnaise
  • 1 tablespoon taco seasoning
  • 2 teaspoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 cups Fritos corn chips

Instructions

  1. Add the yellow corn, shredded sharp cheddar cheese, diced green bell pepper, and diced red onion to a large mixing bowl. Set aside.
  2. Stir together the mayonnaise, taco seasoning, lime juice, salt, and black pepper in a small mixing bowl until smooth.
  3. Combine the mayonnaise mixture with the large mixing bowl of vegetables. Stir to coat all ingredients.
  4. Cover the bowl with plastic wrap and refrigerate for at least 60-120 minutes until chilled.
  5. Gently stir in 4 ½ cups of Fritos corn chips to the chilled corn mixture.
  6. Top with the remaining ½ cup of corn chips for garnish and serve.

Notes

Best served chilled. Store in an airtight container in the refrigerator for up to 3 days.
