- 6 bone-in, skin-on chicken thighs
- 1.5 pounds baby potatoes (halved)
- 6 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese
- 4 tablespoons butter (melted)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper (to season chicken and potatoes)
- Fresh parsley (for garnish)
- 1 cup cherry tomatoes (for extra vegetables)
- 1 whole lemon (sliced for added freshness)
- 1 sprig fresh rosemary or thyme (for flavor)
- Red pepper flakes (for added heat, to taste)
- Extra Parmesan (for topping, to taste)
- 1/2 cup mozzarella cheese (for additional cheese)
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs completely dry with paper towels. Halve the baby potatoes and mince the garlic. Make sure all ingredients are ready.
- Place the chicken thighs on a large baking sheet. Season both sides with salt, pepper, Italian seasoning, and paprika. Drizzle with olive oil and melted butter. Rub the seasoning into the skin. Sprinkle the minced garlic on top of the chicken.
- Toss the halved potatoes with the remaining butter and oil. Add garlic, Parmesan, salt, and pepper. Arrange the potatoes around the chicken on the sheet pan, cut-side down for crispy edges. Make sure not to overcrowd the pan.
- Roast everything in the oven for 35-40 minutes. The chicken should reach an internal temperature of 165°F (74°C). The potatoes should be golden and fork-tender, and the skin on the chicken should be crispy and browned. Broil for an extra 2-3 minutes if you want even crispier skin.
- Remove the pan from the oven when the edges are caramelized. Let everything rest for 5 minutes before serving. Sprinkle extra Parmesan over the dish and garnish with fresh parsley.
- Serve immediately while hot and crispy.
Notes
For best results, pat the chicken dry for crispier skin. Use pre-minced garlic and pre-cut potatoes to save time if desired.
