- 1 pound steak, cut into strips
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 package (9 ounces) cheese tortellini
- 1 cup beef broth
- 1 cup spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the steak strips and cook until browned, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the cheese tortellini and beef broth, and bring to a boil.
- Reduce heat and simmer for about 5-7 minutes, until tortellini is cooked.
- Stir in the spinach until wilted and season with salt and pepper to taste.
- Serve topped with Parmesan cheese.
Notes
For extra flavor, marinate the steak in your favorite seasonings before cooking. You can add more veggies like bell peppers or mushrooms for added nutrition.
