A family recipe for crispy and delicious German Potato Pancakes, also known as Kartoffelpuffer.
Ingredients

- 2 cups grated potatoes
- 1 onion, grated
- 1 egg
- 1/4 cup all-purpose flour
- Salt to taste
- Pepper to taste
- Oil for frying
Instructions
- Combine the grated potatoes, grated onion, egg, flour, salt, and pepper in a large bowl. Mix until well combined.
- Heat oil in a skillet over medium-high heat until hot enough that a drop of water sizzles upon contact.
- Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry until golden and crispy on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels to keep them crispy.
- Serve warm, ideally with applesauce or sour cream.
Notes
For extra crispiness, press excess water from the grated potatoes before mixing. Adjust oil temperature to avoid greasy pancakes.
