Description

A family recipe for crispy and delicious German Potato Pancakes, also known as Kartoffelpuffer.


Ingredients

Scale
  • 2 cups grated potatoes
  • 1 onion, grated
  • 1 egg
  • 1/4 cup all-purpose flour
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Instructions

  1. Combine the grated potatoes, grated onion, egg, flour, salt, and pepper in a large bowl. Mix until well combined.
  2. Heat oil in a skillet over medium-high heat until hot enough that a drop of water sizzles upon contact.
  3. Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon.
  4. Fry until golden and crispy on both sides, about 3-4 minutes per side.
  5. Remove and drain on paper towels to keep them crispy.
  6. Serve warm, ideally with applesauce or sour cream.

Notes

For extra crispiness, press excess water from the grated potatoes before mixing. Adjust oil temperature to avoid greasy pancakes.
