- 4 large ripe bananas (mashed)
- 2 large eggs
- 1/4 cup melted butter
- 1/2 cup coconut sugar
- 1 2/3 cups gluten-free all-purpose flour
- 1 tsp baking soda

Instructions
- Preheat your oven to 350°F and line a 9″ x 5″ loaf pan with parchment paper.
- Mash the bananas until smooth. Then, whisk in the eggs, vanilla extract, and melted butter.
- Combine the gluten-free flour, coconut sugar, baking soda, sea salt, and cinnamon in another bowl.
- Pour the dry ingredients into the wet mixture and stir gently until combined. If desired, add any optional mix-ins like chocolate chips or nuts.
- Transfer the batter to the prepared loaf pan and bake for 50-60 minutes until golden brown.
- Allow to cool for at least 30 minutes before slicing.
Notes
Use overripe bananas for the best sweetness and flavor. Do not overmix the batter to keep the bread light and fluffy.
