- 4 large potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and slice the potatoes into thin rounds.
- In a large bowl, toss the potato slices with olive oil, garlic powder, salt, and pepper.
- Start stacking the potato slices in a muffin tin, alternating with layers of cheddar and Parmesan cheese.
- Bake for 25-30 minutes or until the potatoes are golden and crispy.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with chopped parsley if desired and enjoy!
Notes
To store leftovers, place them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to regain crispiness.
