Description

A rich and creamy mushroom soup that’s simple to make and packed with flavor, perfect for any occasion.


Ingredients

Scale
  • 200g portobello mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 500ml vegetable or chicken broth
  • 100ml cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Stir in the sliced mushrooms and cook until they release their moisture and are tender.
  4. Pour in the broth and bring to a simmer.
  5. Cook for about 15 minutes.
  6. Blend the soup until smooth using an immersion blender or in batches.
  7. Stir in the cream, and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

For added flavor, mix different types of mushrooms and adjust thickness with more broth or cream.
