- 200g portobello mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 500ml vegetable or chicken broth
- 100ml cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Stir in the sliced mushrooms and cook until they release their moisture and are tender.
- Pour in the broth and bring to a simmer.
- Cook for about 15 minutes.
- Blend the soup until smooth using an immersion blender or in batches.
- Stir in the cream, and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, mix different types of mushrooms and adjust thickness with more broth or cream.
