Description

A delightful and zesty side dish that brings a burst of flavor to your meals.


Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add the onion and garlic, sauté until softened.
  2. Add the rice and cook, stirring, for 2-3 minutes until lightly toasted.
  3. Pour in the broth, lemon juice, and lemon zest. Season with salt and pepper.
  4. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes or until rice is tender and liquid is absorbed.
  5. Remove from heat and let it sit for a few minutes before fluffing with a fork.
  6. Garnish with chopped parsley and serve.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of broth or water.
