Ingredients

- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
- Heat olive oil in a saucepan over medium heat. Add the onion and garlic, sauté until softened.
- Add the rice and cook, stirring, for 2-3 minutes until lightly toasted.
- Pour in the broth, lemon juice, and lemon zest. Season with salt and pepper.
- Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let it sit for a few minutes before fluffing with a fork.
- Garnish with chopped parsley and serve.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of broth or water.
