Description

A delicious and fresh Greek meatball bowl served with a refreshing tzatziki sauce, perfect for family dinners or gatherings.


Ingredients

  • 1 lb Ground Beef
  • 1 cup Breadcrumbs
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 Tbsp Olive Oil
  • 2 cups Cooked White Rice
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 medium Red Onion, thinly sliced
  • 1/2 cup Kalamata Olives, pitted and sliced
  • 1 cup Tzatziki Sauce
  • 1 Tbsp Fresh Lemon Juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the ground beef, breadcrumbs, parsley, Parmesan cheese, garlic powder, oregano, cumin, cinnamon, salt, and pepper in a large bowl.
  3. Form this mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper and drizzle with olive oil.
  5. Bake in the preheated oven for about 20 minutes or until cooked through and browned.
  6. Prepare the rice by dividing it among serving bowls.
  7. Top the rice with cucumber, cherry tomatoes, red onion, and Kalamata olives.
  8. Add the meatballs on top of the vegetables and rice.
  9. Serve with tzatziki sauce and finish with fresh lemon juice.

Notes

Make sure not to overmix the meatball mixture to keep them tender. You can grill the meatballs instead of baking for a smoky flavor.
