Description

A hearty and flavorful taco bowl featuring seasoned ground beef, roasted sweet potatoes, and a zesty lime crema, perfect for dinner or meal prep.


Ingredients

  • 1 lb lean ground beef (90/10 or 93/7)
  • 2 medium sweet potatoes, cubed into 1/2-inch pieces
  • 12 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon chili powder or cumin
  • 1 packet taco seasoning
  • 1/4 cup water or beef broth
  • 1 can black beans, rinsed and drained
  • 1 cup canned or frozen corn, thawed
  • 2 cups cooked white or brown rice
  • 1/2 cup sour cream (or Greek yogurt)
  • Juice of 1/2 to 1 lime
  • 2 tablespoons finely chopped fresh cilantro
  • Toppings: diced avocado, extra cilantro, cotija cheese, hot sauce, sliced jalapeños, pickled red onions

Instructions

  1. Preheat your oven to 400°F (200°C). On a large baking sheet, toss your cubed sweet potatoes with olive oil, salt, black pepper, and chili powder or cumin. Spread in a single layer and roast for 20-25 minutes, flipping halfway through, until tender and caramelized.
  2. Heat a large skillet or non-stick pan over medium-high heat. Add the ground beef and cook, breaking it up, until browned. Drain off any excess fat.
  3. Reduce the heat to medium. Stir in the taco seasoning and water or beef broth. Simmer for 3-5 minutes, stirring occasionally, until the liquid is mostly absorbed and the beef is well coated.
  4. Stir in the rinsed black beans and corn, heating through for another 2-3 minutes.
  5. Whisk together sour cream, lime juice, and chopped cilantro in a small bowl. Adjust consistency with a splash of water or milk if necessary. Season to taste.
  6. Divide the cooked rice among serving bowls. Top with the seasoned ground beef mixture and roasted sweet potatoes.
  7. Drizzle generously with the lime crema and finish with your choice of toppings. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stove or microwave before serving.
