A hearty and flavorful taco bowl featuring seasoned ground beef, roasted sweet potatoes, and a zesty lime crema, perfect for dinner or meal prep.

- 1 lb lean ground beef (90/10 or 93/7)
- 2 medium sweet potatoes, cubed into 1/2-inch pieces
- 1–2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon chili powder or cumin
- 1 packet taco seasoning
- 1/4 cup water or beef broth
- 1 can black beans, rinsed and drained
- 1 cup canned or frozen corn, thawed
- 2 cups cooked white or brown rice
- 1/2 cup sour cream (or Greek yogurt)
- Juice of 1/2 to 1 lime
- 2 tablespoons finely chopped fresh cilantro
- Toppings: diced avocado, extra cilantro, cotija cheese, hot sauce, sliced jalapeños, pickled red onions
Instructions
- Preheat your oven to 400°F (200°C). On a large baking sheet, toss your cubed sweet potatoes with olive oil, salt, black pepper, and chili powder or cumin. Spread in a single layer and roast for 20-25 minutes, flipping halfway through, until tender and caramelized.
- Heat a large skillet or non-stick pan over medium-high heat. Add the ground beef and cook, breaking it up, until browned. Drain off any excess fat.
- Reduce the heat to medium. Stir in the taco seasoning and water or beef broth. Simmer for 3-5 minutes, stirring occasionally, until the liquid is mostly absorbed and the beef is well coated.
- Stir in the rinsed black beans and corn, heating through for another 2-3 minutes.
- Whisk together sour cream, lime juice, and chopped cilantro in a small bowl. Adjust consistency with a splash of water or milk if necessary. Season to taste.
- Divide the cooked rice among serving bowls. Top with the seasoned ground beef mixture and roasted sweet potatoes.
- Drizzle generously with the lime crema and finish with your choice of toppings. Serve immediately and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently on the stove or microwave before serving.
