Description

A heartwarming soup filled with ground beef, vegetables, and hearty noodles, perfect for chilly days.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups egg noodles
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain the excess fat.
  2. Sauté the chopped onion and minced garlic until the onion is translucent.
  3. Add the sliced carrots and celery, cooking until softened.
  4. Combine the beef broth and diced tomatoes and bring to a boil.
  5. Cook the egg noodles and dried thyme in the boiling broth until tender.
  6. Season with salt and pepper, then serve hot.

This soup can be stored in an airtight container for up to 3 days in the fridge, or frozen for 2 months.
