Description

A fun and flavorful dish that brings the taste of tropical islands right to your kitchen with a sweet and savory mix of pineapple, peppers, and tender chicken.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken breasts, pineapple chunks, sliced peppers, soy sauce, honey, olive oil, salt, and pepper. Toss until everything is well-coated.
  3. Arrange the chicken and vegetables in a single layer on a sheet pan.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Garnish with fresh cilantro if desired and serve hot.

Notes

For extra flavor, marinate the chicken in the soy sauce and honey mixture for a few hours before cooking. You can add other vegetables like broccoli or carrots for variety.
