Description

A comforting rice soup perfect for cold days, packed with nourishing ingredients for a healthy meal.


Ingredients

  • 1 cup cooked rice
  • 4 cups dashi broth or chicken broth
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced carrots
  • 1/2 cup chopped green onions
  • 1 egg (optional)
  • Soy sauce to taste
  • Salt to taste

Instructions

  1. In a medium pot, heat the broth over medium heat.
  2. Add the cooked rice, mushrooms, and carrots to the pot.
  3. Simmer for about 5-7 minutes until the vegetables are tender.
  4. If using, beat the egg in a small bowl, then stir it into the soup while gently stirring to create ribbons.
  5. Season with soy sauce and salt to taste.
  6. Remove from heat and stir in the chopped green onions before serving.

Notes

Serve hot in deep bowls. Add extra toppings like nori strips or sesame seeds for added flavor. Pair with a light salad or enjoy it alone.
