Ingredients

  • 1 pound (450g) lean chicken breast
  • 2 large sweet potatoes
  • 2 tablespoons olive oil (plus more for seasoning)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 teaspoon fresh rosemary (or ½ teaspoon dried)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into cubes.
  3. Toss sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet in a single layer and roast for about 25-30 minutes.
  5. Season the chicken with olive oil, fresh rosemary, salt, and pepper.
  6. Add the seasoned chicken to the baking sheet in the last 15 minutes of roasting.
  7. Check for doneness until the chicken is cooked through (165°F/75°C).
  8. Serve warm and enjoy the colorful dish.

Notes

For extra crispiness, add cornstarch to your sweet potatoes. This dish can be easily adapted for dietary preferences.
