A vibrant and flavorful meal, these bowls combine grilled shrimp, creamy avocado, and refreshing mango salsa, all packed with essential nutrients.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1 cup cooked quinoa (optional)
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. Mix the olive oil, garlic powder, paprika, salt, and pepper in a bowl. Add the shrimp and toss to coat evenly.
  3. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and are cooked through.
  4. Prepare the mango salsa by combining the diced mango, red onion, lime juice, and salt in a separate bowl. Mix well.
  5. Assemble the bowls by placing a base of quinoa (if using) and adding diced avocado and grilled shrimp on top.
  6. Spoon the mango salsa over the shrimp and garnish with fresh cilantro.

Notes
