- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 tablespoon fresh dill, chopped

- 1 cup cooked quinoa or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1/2 cup feta cheese (optional, omit for dairy-free)
Instructions
- In a bowl, mix olive oil, lemon juice, dill, salt, and pepper together to create the marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat a grill or skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the heat and let it rest for a few minutes before slicing.
- In serving bowls, layer quinoa or rice, then top with sliced chicken, cherry tomatoes, cucumber, avocado, and feta cheese if using.
- Drizzle with additional lemon juice or olive oil if desired. Serve and enjoy!
Notes
For extra flavor, let the chicken marinate for a few hours or even overnight. Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (75°C).
