Ingredients

- 2 pounds Chicken breasts
- 1 can Black beans
- 1 cup Corn
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 Diced onion
- 2 cloves Garlic, minced
- 1 tablespoon Cumin
- 1 tablespoon Chili powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 cups Rice, cooked
- 1 cup Sour cream
- 1 Avocado, sliced
- 1/4 cup Cilantro, chopped
Instructions
- Place the chicken breasts in the slow cooker.
- Add black beans, corn, chopped bell peppers, diced onion, minced garlic, cumin, chili powder, salt, and pepper.
- Stir to combine all the ingredients.
- Cover and cook on low for 360 minutes, or high for 240 minutes, until the chicken is tender.
- Shred the chicken with two forks and mix well with the other ingredients.
- Serve over cooked rice and top with sour cream, avocado, and cilantro.
