Description

Delicious and nutritious sticky chicken rice bowls with wholesome brown rice and colorful vegetables, perfect for a quick weeknight dinner.


Ingredients

  • 1/4 cup low-sodium soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons honey (or maple syrup for a vegan alternative)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil (or olive oil)
  • 2 cups brown rice (or cauliflower rice for a low-carb option)
  • 1 cup broccoli florets (or your favorite vegetables)
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • Sesame seeds and green onions for garnish
  • Sriracha or chili paste for heat (optional)
  • Chopped cilantro for freshness (optional)

Instructions

  1. Marinate the chicken: In a large bowl, mix the soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil. Add the chicken and coat it well. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.
  2. Cook the rice: Rinse the brown rice in cold water. In a medium pot, combine the rice with 4 cups of water. Bring it to a boil, then lower the heat, cover, and simmer for 30-35 minutes until the rice is tender and water is absorbed.

  5. Assemble the bowls: In serving bowls, layer the rice, followed by the sautéed vegetables and sliced chicken. Drizzle with any remaining marinade if desired, and garnish with sesame seeds and green onions.
