Description

A comforting casserole combining tender chicken, creamy soup, and fluffy biscuits – perfect for cozy nights.


Ingredients

  • 3 cups cooked chicken (shredded rotisserie chicken or leftover turkey)
  • 1 can cream of chicken soup (or cream of mushroom/cream of celery)
  • 1 cup sour cream (or plain Greek yogurt)
  • 1/2 cup milk (any type, including dairy-free)
  • 2 cups frozen mixed vegetables (or fresh peas/corn)
  • 1 teaspoon garlic powder (or fresh garlic)
  • 1 teaspoon onion powder (or sautéed fresh onions)
  • to taste salt
  • to taste pepper
  • 1 can refrigerated biscuit dough (or homemade dough)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons melted butter (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the cooked chicken, cream of chicken soup, sour cream, milk, frozen vegetables, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Pour the mixture into a casserole dish, spreading it evenly across the bottom.
  4. Open the can of biscuit dough and separate the biscuits. Cut each biscuit into quarters and place them on top of the chicken mixture.
  5. If you choose, brush melted butter over the biscuits.
  6. Sprinkle shredded cheese evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown and the filling is bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.

Notes

For a spicier version, add hot sauce or red pepper flakes. You can also make a vegetarian version by substituting chicken with tofu or chickpeas.
