- 1 tablespoon Oil
- 2 slices Ginger
- 3 cloves Garlic
- 0.5 pound Lean Ground Beef
- 1 can (6 ounces) Tomato Paste
- 6 cups Low-Sodium Chicken Stock
- 2 teaspoons Sugar
- 1 teaspoon Salt
- 0.125 teaspoon Ground White Pepper
- 1 tablespoon White Vinegar
- 2 pieces Scallions
- 3 packs Enoki Mushrooms
Instructions
- In a pot, heat the oil over medium heat.
- Add ginger and garlic; sauté until fragrant.
- Stir in lean ground beef and cook until browned.
- Mix in tomato paste and cook for a few minutes.
- Pour in the low-sodium chicken stock and bring to a boil.
- Add sugar, salt, and ground white pepper. Stir well.
- Add white vinegar, scallion whites, and enoki mushrooms. Simmer for 5 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with scallion greens.
Notes
Serve with crusty bread or steamed rice for a complete meal. Store leftovers in the refrigerator for up to three days or freeze for up to a month.
