Ingredients

Scale
  • 1 tablespoon Oil
  • 2 slices Ginger
  • 3 cloves Garlic
  • 0.5 pound Lean Ground Beef
  • 1 can (6 ounces) Tomato Paste
  • 6 cups Low-Sodium Chicken Stock
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 0.125 teaspoon Ground White Pepper
  • 1 tablespoon White Vinegar
  • 2 pieces Scallions
  • 3 packs Enoki Mushrooms

Instructions

  1. In a pot, heat the oil over medium heat.
  2. Add ginger and garlic; sauté until fragrant.
  3. Stir in lean ground beef and cook until browned.
  4. Mix in tomato paste and cook for a few minutes.
  5. Pour in the low-sodium chicken stock and bring to a boil.
  6. Add sugar, salt, and ground white pepper. Stir well.
  7. Add white vinegar, scallion whites, and enoki mushrooms. Simmer for 5 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with scallion greens.

Notes

Serve with crusty bread or steamed rice for a complete meal. Store leftovers in the refrigerator for up to three days or freeze for up to a month.
