- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 cup lemon curd
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- Beat the softened cream cheese and 1 cup of sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the sour cream, lemon juice, and lemon zest until fully integrated.
- Pour the cheesecake filling over the crust and drop spoonfuls of lemon curd. Gently swirl through the mixture.
- Bake for 25-30 minutes, until the center is set with a slight jiggle.
- Allow to cool to room temperature, then refrigerate for at least 4 hours.
- Cut into 16 bars and serve to enjoy the flavors.
Notes
For an elegant touch, top each bar with whipped cream or powdered sugar. Store leftovers in an airtight container for up to 5 days.
