- 2 pounds ground beef (80/20 recommended)
- 2 cups elbow macaroni, uncooked
- 1 large onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 28 oz crushed tomatoes (1 can)
- 15 oz tomato sauce (1 can)
- 2 cups beef broth
- 2 tbsp paprika
- 1 tbsp Italian seasoning
- 2 tsp salt (adjust to taste)
- 1 tsp black pepper
- 2 bay leaves (remove before serving)
Instructions
- Heat a large pot over medium-high heat. Add the ground beef and break it apart. Cook for 7–8 minutes until browned. Drain most of the fat, leaving about 1 tablespoon.
- Add the diced onion and bell pepper; cook for 5 minutes.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in the paprika and Italian seasoning.
- Add crushed tomatoes, tomato sauce, beef broth, uncooked macaroni, bay leaves, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15–18 minutes. Stir occasionally to prevent sticking.
- Cook until the pasta is tender and the sauce thickens. Remove bay leaves, taste, and adjust seasoning if needed. Let sit for 5 minutes before serving.
- For a creamy finish, stir in a handful of shredded cheddar cheese.
Notes
For added flavor, sauté some chopped mushrooms or spinach with the onions and bell peppers. Adjust spices to taste.
