Description

A delicious and healthy taco bowl packed with protein, featuring chicken, creamy cottage cheese, and vibrant toppings.


Ingredients

  • 2.5 oz chicken (cut into 1/2-inch cubes)
  • 2.5 tbsp salsa (preferably Pace chunky salsa)
  • 2 tsp taco seasoning
  • 5 oz cottage cheese (use Good Culture for thicker consistency)
  • 5 cherry tomatoes (halved)
  • 0.75 tsp pickled jalapeños (finely minced)
  • 3 tbsp cheese (shredded)
  • 0.25 tsp onion powder
  • 1.5 tsp cilantro (chopped)
  • 1 pinch Tajin
  • Tortilla chips (thicker style)

Instructions

  1. Cut the chicken into 1/2-inch cubes. Place the chicken in a microwave-safe bowl with the salsa and taco seasoning. Microwave for 1-2 minutes until the chicken is cooked through, stirring halfway.
  2. Combine the cottage cheese, halved cherry tomatoes, pickled jalapeños, and onion powder in a blender. Blend until smooth.
  3. Pour the blended cottage cheese mixture into a microwave-safe bowl. Stir in the shredded cheese and microwave for 1 minute, stirring halfway.
  4. Transfer the warm cheese dip to a serving bowl and top with the cooked chicken mixture. Garnish with cilantro, more cheese, and a pinch of Tajin.
  5. Serve immediately with thicker tortilla chips for scooping.

Notes

Best enjoyed warm. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water if needed.
