- 2.5 oz chicken (cut into 1/2-inch cubes)
- 2.5 tbsp salsa (preferably Pace chunky salsa)
- 2 tsp taco seasoning
- 5 oz cottage cheese (use Good Culture for thicker consistency)
- 5 cherry tomatoes (halved)
- 0.75 tsp pickled jalapeños (finely minced)
- 3 tbsp cheese (shredded)
- 0.25 tsp onion powder
- 1.5 tsp cilantro (chopped)
- 1 pinch Tajin
- Tortilla chips (thicker style)
Instructions
- Cut the chicken into 1/2-inch cubes. Place the chicken in a microwave-safe bowl with the salsa and taco seasoning. Microwave for 1-2 minutes until the chicken is cooked through, stirring halfway.
- Combine the cottage cheese, halved cherry tomatoes, pickled jalapeños, and onion powder in a blender. Blend until smooth.
- Pour the blended cottage cheese mixture into a microwave-safe bowl. Stir in the shredded cheese and microwave for 1 minute, stirring halfway.
- Transfer the warm cheese dip to a serving bowl and top with the cooked chicken mixture. Garnish with cilantro, more cheese, and a pinch of Tajin.
- Serve immediately with thicker tortilla chips for scooping.
Notes
Best enjoyed warm. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water if needed.
