- 1 ¼ cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- ½ cup unsalted butter (cold and cubed)
- 4–5 tablespoons ice water
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- ¼ cup melted butter
- 1 ½ cups whole pecans
Instructions
- Prepare the crust: In a bowl, mix together the flour, salt, and sugar. Cut in the cold butter until the mixture looks crumbly. Add ice water gradually until the dough holds together. Chill the dough in the refrigerator for 30 minutes.
- Roll out the dough on a floured surface into a 12-inch circle and then transfer it to a pie pan.
- Make the filling: In a separate bowl, whisk together the corn syrup and brown sugar until smooth. Add the eggs, vanilla, melted butter, and fold in the pecans.
- Preheat your oven to 350°F (175°C). Pour the filling into the prepared crust and bake for 50-60 minutes. The edges should be set, but the center will jiggle slightly.
- Once baked, cool the pie completely before slicing. Serve as desired.
Notes
Serve at room temperature or slightly warmed. Great with ice cream or fresh fruit.
